Beef and Barley with Edamame


Beef Barley soupGreat healthy meal for the day or family. If you are looking for more of a kick add some chili pepper!

What you will need:

½ c. onions, chopped

8 oz. organic, grass-fed beef tenderloin

1 c. edamame

4 c. low-sodium stock

2 tsp fresh thyme

1 med organic tomato, diced

½ c. wild rice (uncooked)

2 tsp sea salt

1 c. hulled or pearl barley (uncooked)

  • Combine all ingredients except edamame in crock pot on high for 2.5 hours
  • Stir in edamame
  • Turn off and allow dish to simmer for an additional 10 minutes. Keep dish covered.
