Cheesy Vegetable Egg Dish


This is great for breakfast, lunch or dinner! Very easy to make and will hold a day or two for future meals! This recipe serves 8-10.

What you will need:

1 med. zucchini, diced

1 med. onion, chopped

1 can (4 oz) mushroom stems and pieces, drained (or can use fresh)

¼ c. chopped green pepper (or ½ red and ½ green)

½ c. butter, cubed

½ c. all purpose flour

1 tsp baking powder

½ tsp sea salt

10 eggs, lightly beaten

2 c. 4% cottage cheese

4 c. shredded Monterey Jack cheese

  • In large skillet, lightly sauté the zucchini, onion, mushrooms and green pepper in butter until slightly crisp. Stir in flour, baking powder and salt until blended.
  • In large bowl, combine eggs and cottage cheese. Stir in vegetables and Monterey Jack cheese.

Transfer to a greased 2.5 qt. baking dish. Bake, uncovered, at 350 degrees for 35-45 minutes.
