Cheese Cookies

Yay for cookies and yay for cheese! Now this is not a sweet cookie, but more like appetizer with a kick!
What you will need:
½ lb butter (very soft)
½ lb sharp grated cheddar cheese (2 c.)
2 c. flour (do not add all at once)
1 tsp Cayenne (red pepper)
2 c. Rice Krispies

Avocado Hummus

Quick and easy! Once you have the ingredients, mix them, and done! Grab some fresh cut vegetables or whole wheat pita bread get the munching.
What you will need:
1 c. garbanzo beans (pre-cooked or canned, drained and rinsed)
1 T. red onions, minces
1 avocado (skin and pit removed)

Crab Puff Breakfast

This is a tasty snack or appetizer for the whole family! This one takes a little bit of time to cook, but worth it!
What you will need:
1 – 6 oz. package snow crab (I use Dungeness if available)
½ c. sliced mushrooms
¼ c. finely sliced celery
¼ c. finely sliced green onions and tops

Yummy Waldorf Salad

Apples, greek yogurt, walnuts and honey… What could be better! This makes a delicious healthy side and can also be a great snack.
What you will need:
½ c. walnut halves
½ c. non-fat yogurt
2 T. light mayonnaise
2 T. minces fresh flat-leaf parsley

Butternut Squash Pancakes

Who doesn’t like pancakes! Here is a healthy and hearty recipe for pancakes that can be eaten in the morning, snack or lunch!
What you will need (makes 20 cakes):
2 c. peeled and grated butternut squash (1 lb squash)
2 c. grated potato (about 2 medium)
1 medium red onion, grated (1/2 c)
