Quick Southwestern Chili

What screams louder than a summer barbecue or a cold winter night? Chili. Cook this up for the neighborhood party or cozy up next to the fireplace with a loved one!

What you will need:

1 lb. organic, grass fed beef combined with 1 lb. organic ground turkey

1 onion, chopped

2 cloves fresh garlic, chopped

3 cans (14 oz each) low-sodium diced organic tomatoes

1 can (4-5 oz) mild green chilies, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

2 cans low-sodium black beans (drained and rinsed)

1 c. frozen whole-kernel corn

1 c. water (or vegetable broth)

1 T. ground cumin

1 T. chili powder

1 tsp dried oregano

1 tsp sea salt

  • In large stock pot, brown the ground turkey and/or beef with onions and garlic over medium-high heat.
  • Add remaining ingredients and stir
  • Bring mixture to just before boiling, cover and reduce heat to medium-low for 20 minutes.
  • You can brown the meat, combine the ingredients, and put in crock-pot on low-medium and let cook during day.
